Almond Butter Mesquite Biscuits

So we're kind of being grandmas right now; a gluten-free, sugar-free biscuit that looks and tastes like a digestive biscuit...yay! Hey, who doesn't like a good digestive biscuit. Although don't expect any improved bowel movements...
Mesquite is our new favourite flavour, it has calcium in it too apparently and other minerally substances. Enjoy these biscuits with tea or almond milk, yum!










1/4 cup raw almond butter
3 tbsp coconut oil
1/2 cup water
3/4 cup oat flour
3/4 cup brown rice flour
1/4 cup ground flaxseeds
1 tbsp mesquite powder
1 tbsp flaxseed
1/2 tsp baking soda
35 drops stevia
1/2 tsp vanilla extract
1/4 tsp cinnamon
Pinch of salt


Preheat oven to 350. Combine almond butter, water, vanilla extract and stevia. Add in all other dry ingredients. Roll dough out to 1/4 inch thick, cut into rounds and pierce each round a few times with a fork. Bake for 17-20 minutes or until golden brown. Makes about 15 biscuits.

  1. another fabulous cookie!!! when i took the GF baking class over the summer, they had mesquite powder. i haven't seen them at whole foods, so haven't gotten a chance to try them, but i loved the earthy slightly sweet taste it had!

  2. This looks so delicious. Will be making this asap along with the thai peanut soup. My boyfriend is vegan and I'm vegetarian so I'm trying to find ways to incorporate both of our likes/needs. This blog is going to give me a lot of great cooking skills; I can already tell!

  3. I made them today, wow, they are delicious! The taste is a big surprise due to the original combination of ingredients. Tomorrow I'll try the lemon-lucuma shortbreads : )
