Veggie, Rice & Bean Burrito w/ Chickpea Tortilla

I've never made a burrito before but it turned out to be crazy easy. Just cook the veggies, throw in rice, beans, spices and salsa (and a few other things). I made about 8 of these and have 7 left waiting in the freezer for convenient consumption. The wrap is made out of just chickpea flour, like a super thin socca. Delish :)

Atop a salad

























1 onion, chopped
1 red pepper, chopped
1 zuchini, chopped
1-2 tbsp oil (for frying)
2 cups brown rice
2 cans pinto beans (or 1 large can)
6 tsp chili powder (my chili powder is not very strong)
4 tsp cumin
1/4 cup nutritional yeast flakes
1/2 cup salsa
3 cloves garlic
Handful of cilantro, chopped
Juice of 1 lime
Salt and pepper, to taste
Chili fakes (extra heat)
Dash liquid smoke


Chickpea wraps:
1 cup chickpea flour
1 cup water
Salt, to taste


Cook onion, red pepper, zucchini, and garlic in a frying pan with oil. Once veggies are cooked through add salsa, beans, rice, spices and nutritional yeast. Cook for a minute or 2. Add in rest of ingredients.
To make chickpea wraps: Mix ingredients for batter, heat an oiled pan on medium, spoon mixture onto pan and swirl batter around as if making a crepe. Flip over to cook other side. Leave wraps to cool, and assemble burritos. Makes 7-8 burritos.
To reheat, place burrito in toaster oven and bake on 350 until heated through.

  1. i am totally bookmarking this. i love making mexican food b/c it accomodates to so many different palates. last time i had people over i made myself lettuce wraps, but i should totally try making socca wraps!! awesome thinking :).

  9. I made these for lunch and they were fabulous! Very tasty and the chickpea burrito wraps worked well. I hate the store-bought rice flour burrito shells and am excited to find an alternative! Question for you- how big did you make the shells? I ended up with only about 4 burrito size shells (about 8 inches in diameter). I think I had the right thickness but wanted to double check. Thanks for a great recipe! I am looking forward to making more and freezing them!

    1. I would say they ended up being between 7-8 inches, i made them as you would make a crepe, very thin. thanks for the feedback! so glad you enjoyed them!! :)

  13. Ok, I made this tonight! Super yummy! It only made 4 very thin ones for us, so next time I might double or even triple the batter and make them a little thicker since my 3 year olds fell apart when she tried to eat it. I LOVE the tortillas and want to make other recipes with this! So delish. Thanks for a great post!

  15. I made this for dinner tonight. I made it with different vegetables and without the cilantro and liquid smoke because I didn't have them. I also added fresh tomatoes, spinach, guacamole and spring onions to my burrito. It was delicious! The filling goes together so well with the chickpea wrap, I'll definitely make this again! Thanks for the recipe!

  16. I need help:( Why my wraps kept falling apart, any thoughts on this? I followed the recipe as written but my first one stuck. So I added more oil and it was better, did not stick, but still fell apart when I tried to make the burrito. I made the third one a little thicker but it was not very pliable either. I really want to make this work. Thanks for your ideas!

    1. It could be the type of chickpea flour you're using some are drier than others, if you're having trouble with it sticking, add some tapioca starch (one tbsp or so) or you could even add some ground flax. Good luck!
