Curried Pea Mash (Vegan, GF)

This is probably the silliest thing we've posted to date, and yes another puree. This was made during one of those times when inspiration hits and you just can't help yourself! This pea-cauliflower mash is sooo soo good, I know it's extremely simple but simple is good right? For some reason peas, curry, coconut oil and cauliflower just go amazingly together. You have to try it out for yourself to really understand where we're coming from with this little recipe. Make this and I guarantee you will want to make it again the next day, or maybe even the next hour :P.

1/2 a head of cauliflower (can be frozen)
1/2 cup green peas (can be frozen)
1 tbsp coconut oil
2-3 tsp curry powder (or to taste)
Salt and Pepper, to taste

Boil water and steam cauliflower until tender, then add peas and steam until peas are cooked through. In a blender, combine cauliflower, peas and rest of ingredients. Makes 2 side dish servings.

I've made this four times, it's becoming a frequent staple :)

  1. How do you manage to make a bowl of green puree looks so delicious?! Can't wait to try this.

  2. Woah. That looks amazingly delish AND healthy! I love it. I totally want to try this for dinner tonight :)

  3. Oh my gosh, I've been eating cauliflower and peas topped with turmeric and cumin almost every night for a fortnight (they're the cheapest veg at the moment...) so all I need to do is take an extra few minutes to make this tonight instead! Yay!

  4. Wow, I never would have thought about putting cauliflower in there! Today I posted a recipe for vegan split pea soup, and when it thickens after it cools, we use it as a spread/dip, so this is very serendipitous :) Looks absolutely gorgeous, and so simple! Thanks!

  5. MMMMMMMM,....This cauliflower & pea puree curied up looks just stunning & must taste awesome too!

MMMMMMMMMMMM,...all the way! I love great & tasty easy post like this a lot!

  6. Oh man, this looks delicious!

  7. Whoa totally trying this raw instead...

  8. very yummy! i used extra virgin olive oil, because i did not have any coconut oil in the house. i also added a little tap water to make the puree more creamy.
