Lucuma-Chip Ice Cream (Vegan, GF)

Lucuma! It's been on my wish list for some time. I'm always looking for alternative sweeteners since Jenn and I are super crazy sweet addicts. Lucuma is a persimmon-like fruit, in this case it's ground up into powder form for ease of use in recipes...such as ice cream! Actually Lucuma flavour ice cream is more popular in some countries than vanilla and chocolate. It tastes AMAZING. Jenn and I were skimming our previous recipes and we realized we seem over exaggerative sometimes but this time I am being dead serious. If you haven't tried Lucuma yet, you must. It made the ice cream taste like caramel drizzle-maple butter, whoa. I don't care if this sounds cheesy: It was like a symphony of flavours in my mouth. lol. So far agar-agar has turned out to be the best ice cream gelling agent, it makes the ice cream very creamy and not the icy consistency vegan ice cream is well known for.



Lucuma powder (Truly Organic Foods), Sweet Cacao Nibs (Navitas Naturals)


1 can full fat coconut milk
1 tbsp agar agar flakes
1/3 cup water
1/4 cup lucuma powder
1/4 cup + 1 tbsp raw honey or agave
3/4 tsp vanilla extract
Handful of sweet cacao nibs
Pinch of pink Himalayan sea salt


Combine agar agar flakes and water in a small saucepan. Heat on low (simmer) until flakes dissolve and turns water jelly-like. Combine coconut milk, agar jelly, lucuma, raw honey/agave, vanilla and salt. Chill in fridge until cold. Put into ice cream maker, make ice cream! Put nibs in at last minute.


Please make this! soooo amazing I almost passed out! Lucuma ice cream, where have you been my whole vegan life?!

  1. wow that looks so good! even thought it's cold here now i want ice cream. i love lucuma for flavoring. i put some in some snickerdoodles and it was amazing.

  2. We love lucuma!! We have been using for awhile now and just love the flavor, although I am sure some will not. Which is fine because means more for us, haha We use lucuma to make ice cream too!!! YUM!!
