Coconut-Chocolate Pudding + Stevia? (Vegan, GF)

I've been on a raw pudding craze these past few weeks, they are just so simple to make and so so satisfying. I've been doing banana-avocado-carob combinations with maple syrup and my oh my, maple and carob go soo well together, who knew?!
I recently went out on a limb and purchased stevia in liquid form, I haphazardly made the mistake of not researching the product before I bought it. And low and behold, I found out that buying liquid stevia is actually a huge rip off and that you can easily make your own with the powdered extract, which is cheaper.  I do like how it comes in a tincture and you can control the drops though. The brand that I bought was advertised to NOT have a bitter aftertaste, it IS slightly bitter, so the next time I will probably combine it with another sweetener. I also found out that stevia extract is quite refined, and that it's best to buy the dried and powdered leaves (the powder should be green, not white). All in all stevia seems to be safe, I mean it is a herb, and when I use it, I don't feel the sugar "rush" I tend to feel with agave or honey.


Anyway, I managed to make a yummy pudding out of it! :)

Coconut Joy!


1 avocado
1/2 cup lite coconut milk
1 1/2 tbsp chia seeds, ground
3 spoonfuls cocoa powder
8 drops stevia (or reduce drops and add other sweetener)
Water, to thin out
Squirt of lemon juice (to prevent oxidation)

Combine avocado, coconut milk, chia seed meal, lemon juice and stevia in a blender. Blend until combined, add water to thin to desired consistency, but be aware that the chia seeds will thicken it up quite a bit. Leave overnight in fridge to set. Makes 1 large serving.

  1. Dang! I had a stevia plant this summer. I totally should have crushed the leaves to do the make-your-own tincture thing. All well. Next summer.

  2. It took me awhile to get used to stevia's taste. We use a mix of the liquid and powder. I just love it. Yes it might be processed, but for me I do not do well with sugar, so stevia is the best!!

    Pudding looks great! You know we love puddings too!

    Stevia comes in so many different forms I have a very difficult time posting recipes with it. I do prefer the liquid because, as you mention, you can control the number of drops more easily. I started out with the brand you have pictured but recently I have been buying Stevita liquid stevia. It doesn't seem to be bitter. Also, any stevia will taste bitter if you use too much. Thanks for the yummy post.

  7. I have made a similar dessert with avocados before. How did you keep your avocados from turning bad overnight? My pudding got that old avocado taste the next day.

  8. @ Amy: hey amy, it's funny because I was literally just thinking, omg I forgot to write down lemon juice! I put a squirt of lemon juice to balance out the flavour and also to keep the avocado from oxidizing.

  9. I thought this blog was supposed to feature recipes that were sketch free... I definitely think stevia is a bit sketchy. It comes out of a medicine dropper... how sketchy!

  10. hey becca, i know it can appear that way, consider that herbal medicines also come in medicine droppers and they are definitely not sketchy.
    I'm only just beginning to experiment with stevia, i have yet to really get into it and decide for my self whether it's sketchy to me or not.
    This blog isn't perfectly sketch-free, nor can any food be completely and utterly "pure" because everyone is different and has different nutritional needs. This blog and these recipes just reflect OUR own views on food.
