When I made them, mine were actually quite soft and chewy (I used gluten-free flour that is posted under substitutes tab) You may have baked them too long, Gluten-free vegan cookies are very temperamental when baked. Usually if they don't look done yet, you can bet that they are. Applesauce will make them more cakey, unless that is what you are looking for.
