Vegan KD! (Vegan, GF)

There are so many recipes for vegan KD, but they usually either take way too long to make or they don't even taste like KD. We've tried a couple recipes that left us in the cold...until now! This recipe takes only a couple minutes to whip up and the ingredients are relatively uncomplicated. You probably would have most of them lying around your refrigerator as we speak! Sometimes simple is better and this vegan KD is proof. Good, cheap vegan college fare :)





2 cups dry wild rice pasta (or other pasta alternative)
1/4 cup hummus
3 tbsp nutritional yeast
1/4 cup almond milk/water
1 tbsp olive oil
Salt and Pepper to taste

Cook pasta according to package instructions. Combine sauce ingredients and blend until combined. Mix sauce into pasta, cook until heated through. Makes 2 big servings, or 3 small servings.
