Grain-less Cashew Butter Cookies (Vegan, GF)

Believe it or not we are still on the cookie train after devouring them for the last week. There were no more vegan cookies for us to snack on so I broke down and made a batch! We went to a vegan restaurant in Toronto called Fresh and bought a cashew butter cookie and ever since then we've been wanting to re-create the recipe. We saw a post on Never-homemaker for grain-free cookies that inspired this recipe. You could of course sub in peanut butter for the cashew butter, just make sure it contains only peanuts and without added oil or sugar.

1/2 cup roasted cashew butter
1/2 cup sucanat, grinded in a coffee grinder until sandy
1/2 cup coconut flour
1/4 tsp baking soda
1 flax egg
1/4 cup almond milk/water
1/4 tsp sea salt
1 tsp vanilla

Cream together cashew butter, sucanat, egg and almond milk in a bowl. In a separate bowl mix together flour, salt and baking soda. Gradually add dry to wet ingredients. Mix until fully incorporated. Form into balls and press with a fork in a criss-cross pattern. I made mine pretty small, like mini cookies. I probably scooped each to be around a rounded tsp worth. Bake at 350 F for 12 minutes. Makes about 24 cookies.

Baby Cookies

These cookies were so incredibly easy to make and they definitely didn't taste like they were gluten free, let alone grain free. I promise this will be our last cookie post until the new year....hopefully. Ok, we'll see what happens...

  1. Mmmm- these look perfect - right up my alley. And, since I threw away a batch of over-baked cookies last night, maybe I'll make these tonight!

  2. Were those the Sweets from the Earth cookies? Yours remind me of a grain-free cashew chocolate chip cookie I made a while back (many similar ingredients--I used maple syrup instead of Sucanat). I love, love the way cashew butter bakes up in cookies! These sound delicious. :)

  3. Yumm! I just made these and could barely wait until they were cool enough to pop into my mouth!

I didn't have cashew butter so just used peanut. Still turned out great. And not too sweet!

Keep up the good work ladies!
